Water for Espresso in the UAE: Why Your Coffee Tastes Different

A brewed coffee is somewhere around ninety-eight percent water. Whatever else you buy — the beans, the grinder, the training — you are selling a cup that is mostly the thing coming out of the wall, and in the UAE that thing is not what your roaster was tasting when they wrote the recipe. This is the part of the bar that owners skip, then spend a year blaming the beans for.

Where your water comes from, and why that matters

Most of the UAE's drinking water is desalinated seawater rather than water drawn from a river or an aquifer, and it reaches your café after treatment, storage and a run through the building's own tanks and pipes. That last stretch is the part nobody accounts for. Two units in the same street can pour noticeably different water depending on how the building stores it and how long it sits. It is also why you should not take a number from a national figure, a supplier's brochure or another café's setup and assume it applies to your tap. The only water that matters is the water at your machine.

Mineral content also moves. Supply blends change, tanks get cleaned, buildings switch source. A filter chosen against one test a year ago is not necessarily right for what is coming through now, which is the argument for testing more than once rather than for buying something bigger.

What water actually does in the cup

Minerals in water are not contamination — they are part of the extraction. Dissolved magnesium and calcium help pull flavour compounds out of the coffee grounds, and bicarbonate buffers acidity, which is why the same espresso can taste bright in one city and flat and chalky in another. Water carrying a lot of buffering capacity rounds off exactly the acidity a light roast is built around, and the result reads on the bar as a dull, slightly muddy shot that no amount of grinder adjustment fixes. Baristas usually respond by chasing the dial-in for days. The dial-in was never the problem.

Chlorine and its by-products are the other half. They are there for good public-health reasons and they are not a safety issue in your cup, but the palate picks them up at levels far below anything that matters medically, and they flatten aromatics. This one is the easy win: basic carbon filtration handles it.

Scale is the expensive half of the problem

When water is heated, dissolved calcium and magnesium come out of solution and bond to hot metal. That is limescale, and inside an espresso machine it forms exactly where you least want it: on the heating element, in the boiler, and through the narrow passages that feed the group. The damage is gradual and it is not really a repair bill until suddenly it is. Scale insulates the element so the machine works harder and holds temperature less well, it narrows flow paths so pressure and volume drift, and in the end it takes out the boiler or the element — the single most expensive component in your bar.

The important thing to understand is that this is cumulative and invisible. Nothing tells you it is happening. The machine simply becomes slightly less consistent over months, then fails on a morning that has nothing to do with the morning the scale actually formed. This is why a technician's first question about any failed boiler is what filtration was on it, and why the equipment buying guide treats filtration as part of buying the machine rather than an accessory bought afterwards.

Why stripping everything out is not the answer either

The intuitive fix — take all the minerals out and there can be no scale — creates a different and less well-known problem. Water with essentially nothing dissolved in it is chemically aggressive: it tends to pull material from whatever it touches, which in a coffee machine means the copper and brass it is sitting in. Boilers and fittings run on fully demineralised water can corrode from the inside, and that failure is no cheaper than the one you were avoiding. It also makes bad coffee, because you have removed the minerals that were doing the extracting. Water treated to remove everything has to have something put back before it reaches the machine.

So the target is not soft water and it is not pure water. It is water in the band your machine manufacturer specifies, with enough mineral content to extract properly and little enough to keep the boiler clear. That band is in your machine's manual, expressed in whatever unit the manufacturer uses. Work to theirs rather than to a number from an online forum, because the warranty is written against theirs.

Most café installations are a combination rather than one cartridge, and the sizing depends on your volume as much as your water. A filter is a consumable: it works until it is exhausted and then it quietly stops working while still sitting in the line, which is the failure mode to plan for. Whoever installs it should tell you, in writing, how it is sized for your throughput and when it needs changing — and that date belongs in your coffee machine maintenance schedule, not in someone's memory.

Test before you buy anything

The order matters here, because it is easy to spend real money on a system nobody measured for. Get your water tested at the tap you will actually plumb into. Read your machine manufacturer's specified range. Give both to a supplier and ask them to size a solution against those two numbers, in writing, with the cartridge change interval and the cost of the consumables stated. Then re-test after installation to confirm you got what you paid for, and put a recurring test in the diary. A supplier who quotes you a system before seeing a test result is selling you a product, not solving your problem.

If you are opening rather than fixing, do this before the fit-out is finished. Filtration needs space, a water connection and often a drain, and retrofitting it into a finished bar costs more than allowing for it on the drawing. Does water really change how coffee tastes?

Yes, substantially. Can I use bottled water in my espresso machine?

Is filtered water enough to stop limescale?
